Method
- Drizzle the bread lightly with extra virgin olive oil and toast until golden and crisp.

- Cut the tomato in half and grate it using the coarse side of a box grater.

- Transfer the grated tomato to a fine-mesh sieve and strain, keeping only the thick tomato pulp.

- Mix the tomato pulp with extra virgin olive oil, freshly ground black pepper, and a little salt.

- Spread the seasoned tomato generously over the toasted bread.

- Top one toast with anchovy fillets and the other with Jamón.

- Drizzle with a little more extra virgin olive oil and finish with freshly ground black pepper.

- Serve immediately while the toast is crisp.
Notes
Season the tomato lightly — both the anchovies and the Jamón add plenty of salt. Assemble the toasts just before serving so the bread stays crisp.
