Mediterranean Tomato and Feta Salad

Ingredients
  

  • 3 large ripe tomatoes (about 450–500 g total)
  • 3.5 oz greek feta cheese (100 g)
  • ½ cup packed fresh basil leaves (about 10–15 g)
  • 1 tbsp extra virgin olive oil
  • 1 tsp thick balsamic glaze
  • 1/4 tsp kosher salt to taste
  • freshly ground black pepper to taste

Method
 

  1. Slice the tomatoes into rounds and arrange them on a serving plate.

  2. Crumble the feta generously over the tomatoes.

  3. Scatter fresh basil leaves over the salad, tearing larger leaves by hand if needed.

  4. Season with kosher salt and freshly ground black pepper.
